Waffles For Lunch?

Hi there! Now that the weather is getting much cooler, I am so grateful for the fresh air, the early morning walks, and the feeling of warmth and coziness that the approach of winter always brings. I have also finally come to term with the fact that things might be like this for a long time. So while I agree that it really sucks I also feel that it is now more than ever that we must be diligent and stay home for the good of others. If not for our sake, then for the sake of our healthcare workers who risk their lives everyday. Today I felt like comfort food so I came up with this ‘Waffles for lunch?’recipe. Ingredients
3 cups of butternut, cooked and mashed
3-4 spring onions, thinly sliced
1 garlic clove, minced
4 tbsp rice flour
4 eggs, whisked
Salt & pepper to taste
A handful of fresh chopped parsley
Coconut oil for greasing the waffle iron

Method
1. Add all the ingredients (except for the coconut oil) into a mixing bowl, stir well.
2. Pre-heat and grease your waffle iron, spread out the batter and cook until golden brown.
3. Add any toppings of your choice and serve hot! I love making a simple tomato salsa (with baby tomatoes, onion, cilantro, lime juice, little chilli, cumin, salt, and pepper), some guacamole (with 1 avocado, drizzle of olive oil, tamarind and balsamic vinegar, the juice of 1 lemon and salt and pepper to taste) and a protein (either an egg or a couple of handful of cooked beans)

How Keto friendly would the waffles be?
Hi Tammi. Butternut squash is not keto friendly as it is too high in carbs. A keto friendly alternative squash would be kabocha. Rice flour is also not keto friendly so you would have to replace it with almond/hazelnut flour.
Would these freeze well, do you think? Love the look of this and planning to make some for quick lunches later.
