Vegan Nuts Pie Bites

 

 

Hi, where have the last few weeks gone? Just a quick catch up as I realize it’s been forever since I updated! Since the christmas holidays, which by the way already feel like a distant memory, the last few weeks have been super busy! My sight has been set on exciting new projects, I have settled into work-mode, and planned my February trip to Paris and Dubai to visit my family and for work. And as always, I’ve spent time in the kitchen making some super easy and delish new recipes. These Vegan Nuts Pie Bites are on my family radar this week. Hope you enjoy them and as always let me know what you think!

 

Ingredients

Macademia Crust:

2 cups macadamia flour
1/3 cup arrowroot
1/4 cup coconut oil, melted
1/4 cup @silan.co.za date syrup
1 tsp vanilla extract
1/3 tsp cinnamon powder

Topping:

2 tbsp coconut oil
2 tbsp date syrup
1/2 cup coconut sugar
1/2 tsp sea salt
1 tsp vanilla extract
2 cups pecans, chopped
2 tbsp coconut milk
1-2 tbsp cornstarch

 

Method

 

1. Preheat the oven to 180oC. Place all crust ingredients in a bowl, stir well then press into a pan lined with baking paper.
2. To make the topping, combine the coconut milk and cornstarch and stir until smooth.
3. Melt the coconut oil in a saucepan over medium heat. Add the pecan nuts and toast for 1 minute, stirring continuously. Pour in the rest of the topping ingredients (don’t forget the coconut milk and cornstarch mix), whisk until well combined.
4. Pour the mixture ontop of the crust, spreading evenly.
5. Bake in the oven for about 25-30 minutes.
6. Let cool for 2-3 hours before golfing it all down. Pretty special stuff!
