Vegan Granola Bar
Hi, Just a quick catch up as I realize it’s been forever since I updated! I know January has taken forever, but February feels like it has gone 100 in a 45 zone. All good though…it’s how I like it! I spent a whole 2 weeks in France where my sight has been set on connecting with friends and family who I don’t see often enough. It has been so good spending quality time with some of the people I love most. I absolutely love to be back in my routine though and it feels so good to be home in Cape Town for a bit, focusing on myself and my work. Here is a new yummy recipe on my radar this week – I hope you enjoy it and as always let me know what you think!.
1 ripe mashed banana
1 tbsp melted tahini
1 tbsp melted peanut butter
1 1/2 tbsp maple syrup
2 tbsp melted coconut oil
1 1/2 cup gluten free rolled oats
1 cup raw mix seeds
2 handful chopped pecan nuts
1. Preheat the oven to 180oC. Place the mashed banana, tahini, peanut butter, maple syrup and coconut oil in a bowl, stir well.
3. Add in the rest of the ingredients, mix all together.
3. Pour the mixture on a lined baking dish and bake for 20mins
4. Let cool for 2-3 hours, admire your amazingness and let your nostrils tango. Serve, keeping the secret to yourself. Pretty special stuff!
