Vegan Cauliflower Pizza Crust

Hi there! There are few things in life as satisfying as delicious crispy pizza, and even better when the crust happens to be healthy. It makes Friday night perfect, and us super proud of ourselves for not only concocting a pizza but also making the dough from scratch! As always, I would love to have your feedback.
Ingredients
1 large cauliflower head
1 flax egg (1 tbsp flaxseed meal with 2.5 tbsp water. Leave to rest for 5 minutes)
1/4 cup nutritional yeast
1 tbsp NOMU rosemary & Thyme blend
1 tbsp garlic powder
3 tbsp melted coconut oil
Salt & Pepper to taste

Method
1. Preheat the oven to 190oC and line a baking tray with parchment paper.
2. Place cauliflower in a food processor and pulse until grated.
3. Transfer to a microwave-safe bowl. Place into microwave for 4-5 minutes, leave it to cool.
4. Place cooled cauliflower into a clean kitchen towel or a cheese cloth, drain to remove as much water as possible.
5.Transfer drained cauliflower to a large bowl and add egg, nutritional yeast, rosemary and thyme seasoning, salt and pepper to taste.
6.Transfer dough to the baking tray and pat into a crust (I love making single serving mini pizzas but it is up to you!).
7. Bake until golden and dried out, 15 minutes.
8. Top crust with homemade pizza sauce (mine is super simple: sauté onion and garlic, add 1 can of tomato, 2 tsp of Pesto Princess sundried tomato Pesto, 1 tbsp NOMU Mediterranean Aromatic Spice Blend, a drizzle of white wine sauce, let it simmer, salt and pepper to taste) and any other toppings you like…I added oven baked broccoli, caramelised onions and a sprinkle of nutritional yeast because that’s all I had left in my fridge/pantry. Bake for another 5 minutes.. Serve immediately, sprinkled with basil and red pepper flakes, if desired. And boy oh boy, will you love them!
