Snack Attack Chocolate Treats

Still have about…one of these snack attack chocolate treats in my freezer leftover from recipe testing and I have hidden it so that nobody but me can find it! Ingredients

1 cup of almond flour
1/2 cup macadamia flour
2 tbsp desiccated coconut
1/2 cup melted dark chocolate
1/4 tsp sea salt
1/4 cup protein powder
1/2 cup date syrup
1/2 tsp vanilla extract
1 heaped tbsp peanut butter
2 tbsp melted coconut oil
1/2 to 1 cup melted dark chocolate
A handful of ground toasted pecan nuts

 

Method

 

1. In a food processor, place dry ingredients, and blend until the mixture has turned into a fine flour texture, about 20 seconds.
2. Add all other ingredients, except for the melted chocolate used for coating, blitz again until mixture comes together.
3. Pour half of the melted chocolate into small silicone molds, freeze for 15 minutes.
4. Once the chocolate has firmed up, add the mixture on top. Use your hands to evenly press it down.
5. Pour the other half of the melted chocolate on top of the mixture, freeze for 15 minutes
5. Sprinkle with your toasted pecan nuts. These will keep in the freezer for 3 months or a few seconds in your hands!
