Sego’s Vegan Patties

 

 

Hi there! How are you? It seems we are at a stage where Covid-19 has spread its tentacles across the world, across every industry, every household, and every conversation. I think as the lockdown is forcing us to adjust to a new normal and we’re all faced with the reality that things are unlikely to be normal again for a long, long time, we can now start having conversations about moving forward as-is reshaping some areas of how we live our lives- as opposed to the discomfort that comes with the unknown. Hope you’re all staying safe, sane, and well. And before I leave you to get on with your day, as always, on a ‘note gourmande’, I am sharing another favourite recipe of mine: Sego’s vegan patties. Ingredients

2 tsp olive oil
3-4 spring onions, finely chopped
1 finely chopped chilli
2 tsp crushed garlic
2 carrots, peeled and grated
2 tbsp Indian curry ( I use the Nomu blend)
Juice of 1 lemon
Salt and pepper
1 1/2 cup cooked quinoa
1 1/2 cup cooked potato
1/2 cup almond flour
2 handful of toasted nuts
A good handful of chopped chives or any other fresh herbs you like
1-2 tbsp olive oil (for frying)

 

Method

 

1. Chop the spring onions and peel and grate the carrots.
3. Heat 1 tbsp of oil in a frying pan, add the spring onions,chili, garlic, carrots, curry, lemon, salt and pepper, let cook for about 5 minutes, stirring occasionally.
4. Place the quinoa, potato and all the fried ingredients into a mixing bowl, stir well.
5. Add the flour, nuts and herbs, stir well.
6. Using your hands, shape into patties.
7. Heat the olive oil in a cast iron or stick-free skillet on medium high. Gently place the patties in the pan, and cook until nicely browned, 3-4 minutes on each side, until beautifully golden brown.
8. Serve with wedges of lemon. You can also serve with a Vietnamese dressing (2 tbsp fish sauce, 1 tbsp brown sugar, 1 1/2 tbsp lime juice, 1 1/2 tbsp white vinegar, 2 tbsp water, 1 chilli, minced-combine all ingredients in a bowl..as simple as that!) on slider buns for a super yum vegan burger. Pretty special stuff!
