Hi, as this is my first 2020 post, I just want to start by wishing you a Happy New Year and thanking you for your continued support and for reading my post, newsletters and articles that I put effort into just for you! As we have moved into a new decade I have taken some much-needed reflection on who I want to be and what steps I need to put into place to become that person. I’m definitely on the right track, but of course, I want to strive to become the best version of myself. So as I am looking inward, I am also setting some personal achievement goals for myself. One of them is to strive to be more environmentally responsible by reducing my family’s greenhouse gas emissions. While there are many ways to do this and save energy, eating low on the food chain is one of the simplest and easiest changes that we can make. This means eating mostly fruits, veggies, grains, and beans as meat and dairy—is responsible for 14.5 percent of manmade global greenhouse gas emissions. Ingredients

2 tbsp. coconut oil
2 cloves minced garlic
1 tbsp. grated fresh ginger
6 spring onions, thinly sliced
1 tbsp. toasted sesame oil
3 tbsp. tamari sauce
1 tbsp. Worcester sauce
1 tbsp. peanut butter
1 heaped tsp. date syrup
1 tbsp. apple cider vinegar
1/2 tsp salt
1/4 tsp. cayenne pepper
300g shiitake mushrooms, finely chopped
3 cups of kale, stems removed, finely chopped
2 cups cooked and cooled basmati rice

 

Method

 

1. Heat 1 tbsp of oil in a frying pan, add minced garlic, grated ginger, and spring onions, cook over a medium heat for a minute until fragrant.
2. Add the sesame oil, Tamari, Worcester sauce, peanut butter, syrup, apple cider vinegar, salt and cayenne pepper, stir well.
3. Add mushrooms and kale, sauté for about 5 minutes.
4. Add another tablespoon of coconut oil to the pan and stir in the rice. Cook until heated until the rice is piping hot, about 2 minutes. Serve immediately. Pretty special stuff!
