Homemade Vegan Cheese
This Vegan Cheese Recipe is super simple but genius! It makes the perfect appetiser for any occasion and can be spread on crackers for a super yum nutritious snack!
1 cup cashew nut (soaked overnight)
1/2 cup of silken tofu
1 big garlic clove, minced
1 tbsp. nutritional yeast
1/2 to 1 tsp. salt
1/2 tsp. smoked paprika
1/2 tsp. cumin
1 tablespoon lemon juice, freshly squeezed
1 tbsp. coconut oil
3/4 cup hot water
A handful of fresh dill, thinly chopped
Crushed whole almonds
1. Add cashew nut, tofu, garlic, nutritional yeast, salt, paprika, cumin, lemon juice and coconut oil to the food processor, blend until creamy.
2. Adjust seasoning to taste.
3. Once the mixture is smooth, slowly add in hot water.
4. Scoop all cheese in a nut milk bag and twist the top of the bag to create a cheese shape with the mixture 5. Refrigerate to set overnight then remove the cheese from the nut milk bag and coat with chopped dills and crushed almonds.
