Fall Banana Bread

Hi there! There is something about fall that makes me want to bake! The earthy foods like soups and stews, and the spices like cinnamon, nutmeg and clove. They have to be the most heavenly fragrance. Here is an oldie but goodie recipe that’s bursting with the spices of fall— Fall Banana Bread- it’s easy to prepare and just the perfect compliment to a warm cup of tea or coffee on a cold, rainy fall day.
Ingredients
2 cups almond flour
2 teaspoon baking powder
½ teaspoon salt
¼ teaspoon of ground cinnamon
½ teaspoon nutmeg
Dash cloves
3 tbsp desiccated coconut
3 ripe banana
2 tbsp maple syrup
1/3 cup nut butter
3 flaxseed eggs
1 teaspoon vanilla extract
1 cup chocolate chunks

Method
1. Preheat oven to 180°
2. Combine the flour, baking powder, cinnamon, nutmeg, cloves, coconut and salt, stirring with a whisk.
3. Place banana, syrup, nut butter, eggs and vanilla in a food processor, blend until smooth.
4. Add the wet and dry ingredients together, stir until well combined, then fold the chocolate chunks into the mix.
5. Pour batter into a loaf pan coated with coconut oil. Bake at 180° for 25 minutes or until a wooden pick inserted in center comes out clean.
6. Cool completely on a wire rack.
