Crunchy Baby Marrow Patties

Today, I asked myself a question that has already pushed itself into my heart a zillion times…how can we all stay strong during this crisis? I think it really comes down to few words that should dictate our being, feelings and actions: Love, resilience, and care for others – and obviously total lockdown. And, if we all look out for each other, stay home, wash our hands often, and keep a positive mindset, when we emerge out of this long dark tunnel, I am hoping that many of us will want a more caring, inclusive approach in all aspects of life, and a new way of economic thinking, based less on materialism, self-interest and the destruction of our environment, and more on the economics of generosity, kindness and loveliness. Ingredients
– 6 grated baby marrows
– 2-3 tablespoons @mojome.lchf four seed mix
– 1-2 tablespoons roasted chopped cashews
– 1 egg
– Salt and pepper to taste
– Juice of 1/2 lemon
– 1/4 cup almond flour
– 1 tbsp @nomuchirps Egyptian Dukkah Spices
– t tbsp @nomuchirps Rosemary and thyme roast
– Big handful of fresh basil, parsley and chives, finely chopped

Method
1. Add grated baby marrows, mixed seeds, chopped cashews, egg, salt, pepper, lemon juice, almond flour, Dukkah spices, rosemary and theme roast and fresh herbs into a mixing bowl, stir well.
2. Shape mixture into balls, if too wet, add a little almond flour, place onto an oven tray and brush with a little olive oil. Bake in the oven for 25-30 minutes at 200 C.
4. To serve, add a good lick of extra virgin olive oil and a few turn of black pepper mill. Crown with few rockets and herbs you can resuscitate from your fridge and a royal dollop of greek yoghurt sauce (just mix together greek yoghurt, finally chopped spring onions and red onion, juice of a lemon, salt and pepper and a large handful of your favourite fresh herbs..et voila!). Pretty special stuff!
