Crispy Green Falafel

 

 

These Crispy Green Falafels are still one of my favorite portable snacks! One of my friends packed these for her mid morning snacks one week and then decided to make them again every week, that’s how good she thought they were hehe! Recipe on blog, linked in my profile. Ingredients

250g cooked chickpeas
1 cup parsley leaves , roughly chopped
1/2 cup spring onions, roughly chopped
2-3 garlic clove, minced
1 small chilli, roughly chopped
2 tsp cumin powder
1/2 tsp ginger powder
1 tsp coriander powder
Juice of 1 lemon
Salt and pepper to taste
1/2 cup nutritional yeast
1-2 tbsp olive or coconut oil

 

Method

 

1. Add all the ingredients except for the oil to a food processor, pulse until you get a coarse texture. Place the mix into the fridge for 30 minutes.
2. Using your hands, shape into patties and spoon them into a hot pan with the oil.
3. Fry them for 2-3 minutes on each side, until golden brown.
6. Serve with wedges of lemon and a salad or on slider buns for a super yum vegan burger. Pretty special stuff!

    Just wondering if you noticed the typo, you mentioned a cup of parsley twice.
