Chocolate Ganache Brownies

Hi there! I just love this new Chocolate Ganache Brownies recipe. I used desiccated coconut, dark chocolate, hazelnuts and pecan nuts this time, but I’m thinking crushed pistachios/peanuts, toasted sesame seeds or powdered freeze-dried raspberries would be wonderful as well. As my trusted group of go-to’s, I wanted to share it with you and can’t wait to hear your thoughts. If nothing else, they will definitely make your week a little sweeter! Ingredients
1 cup roasted hazelnuts
1/2 roasted pecan nuts
1/2 cup melted dark chocolate for the brownie
1/2 cup date or maple syrup
1/4 tsp sea salt
1 tbsp desiccated coconut
1/2 tsp vanilla extract
1 cup melted dark chocolate for the ganache
1/2 cup coconut milk
1/2 tsp vanilla extract

Method
1. In a food processor, place hazelnuts and blend until the mixture has turned into a fine floury slightly buttery texture.
2. Add the pecan nuts, blitz again until the pecan nuts are diced small.
3. Pour the nuts mixture into a mixing bowl, add the coconut, syrup, chocolate, vanilla and salt, stir until well combined.
4. Make the ganache by mixing the rest of the ingredients together until smooth.
5. Transfer the nuts mixture into a rectangle silicone mold and use your hands to evenly press it down.
6. Pour the ganache on top, freeze for 15 minutes.
