Breakfast Granola Cookies

These Breakfast Cookies are packed with an energy boost and heaps of delicious goodness. It is basically a bowl of homemade granola in cookie shape! They taste as yummy as your favourite oatmeal raisin cookies – but they’re vegan, refined sugar free, gluten free, and will keep you full until your next meal.
Ingredients
110g of rolled oats
40g desiccated coconut
3/4 cup almond flour
1 tsp baking powder
100g sultanas
1 tsp ground cinnamon
1 tsp vanilla essence
3 tbsp coconut oil
3 tbsp maple or date syrup
1/3 cup coconut milk (optional)
1 flaxseed egg

Method
1. Preheat the oven to 180oC and line a baking tray with parchment paper.
2. In a mixing bowl, mix all the ingredients to combine. The dough should be firm enough to be shaped.
3. If the dough is too dry, add the coconut milk.
5. Using your hands and a spoon, scoop around 1 tbsp of the mix into your hands and make a bowl shape. Place the balls onto the baking tray.
4. With a fork, press each ball down to shape into a cookie.
5. Bake for 20 minutes until golden.
5. These will keep for 3 seconds in your hands!

What do you mean by 1 flaxseed egg?
Hi Roula. If you are not vegan you can use a normal egg. If you are vegan, you can replace with a flaxseed egg by mixing one tablespoon of flax seeds and three tablespoons of water. You’ll need to grind the flax seeds into a fine powder using a coffee or spice grinder (or use 2 1/2 teaspoons pre-ground), and then you simply whisk in the water until it becomes gelatinous.

Hi Roula. It is a normal substitute to a normal egg. You need to mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes <3
Hi Roula I don’t have a parchment paper for my baking tray. Can I use oil or butter for the mix to not stick?
