This chunky avocado salsa is quick and easy to prepare, using the flavours of classic salsa with epic avocado.
2 salad tomatoes
1 large shallot or 3-4 spring onions
1 red pepper
2 medium avocados
juice of ½ lemon
1-2 tsp. of balsamic vinegar
4 – 5 sprigs of coriander
Salt and pepper to taste
2 tbsp. Olive oil
1 pinch of toasted cumin seeds
1 small green chili thinly sliced(optional)
1. Wash, clean and dice all the salad vegetables and place in a mixing bowl.
2. Wash the coriander, remove the leaves, cut finely and add it to diced salad vegetables, add diced avocado.
3. Add lemon, balsamic vinegar, olive oil, cumin seeds, chili, salt and pepper to taste and toss lightly.
It makes the perfect snack accompaniment to Taco Tuesday or other snacks and crudités. You will end up finding excuses to make this salsa with avocado, it’s that good!
