Avo toast has become such a hot shiz– It’s so Instagrammable that #avocadotoast has over 1, 000, 000 posts and it’s on the tables of every hipster and food critic! The balance of healthy monounsaturated fatty acids vitamins and minerals make for an ideal snack, anytime! Easy to prep,yet so heavenly!
Juice of ½ lemon juice
1-2 tablespoons olive oil
1 small shallot
1 teaspoon balsamic vinegar
1 pinch of cayenne pepper
Salt and pepper
Handful of coriander leaves,chopped
Handful of toasted and roughly chopped nuts (walnuts, almonds and pine nuts work best)
Slices of whole wheat bread (or gluten free in my case) of your choice
1. Slice the avocado in half, add it to a bowl with the lemon juice and olive oil and mash it. If you like chunkier avocado as me, you only need a few swipes of the forks.
2. Add, shallots, balsamic vinegar, cayenne pepper, salt, pepper and coriander and stir well.
3. Toast bread slices. Spread the avo mix evenly. Sprinkle nuts on top for a great crunch!
